However, since we are always attentive to the seasonality of our products, from October to May we will offer you our pappardelle with pumpkin and guanciale or the rigatoni with Roman broccoli and pecorino cheese; at the beginning of the spring and throughout the long and hot Roman summer, you can taste the classic pasta alla checca (drained and tossed with mozzarella cubes and raw cherry tomatoes), or one of our classic sauces with all the colors and flavors of the sun – sautéed courgettes and aubergines combined with a soft mousse of smoked sweet peppers – perfect with pappardelle or tagliatelle!
